If I were to create a category for myself using a pseudonym, could that be changed to my real name later, if I wished to do so?

Sort of. What happens is that if you later decide to add things under your real name, we'd have to set up a new category and move everything over.

Simpler: your user page under the pseudonym could show your real name later if you wish, e.g. http://imslp.org/wiki/User:Coulonnus
