If I were to upload the entire library of a boys choir, excluding copyrighted material, how would I group all of these works under a category akin to "Scores from the Library of Congress"?

I don't think isozvaillancourt means that the works are actually from the Library of Congress but was using that as an example. A template could be created that could go in either the scanner field or in the miscellaneous notes. Part of the function of the template would be to include the work page in a category for the choir's library. To see both in action look at Pinto's American Fantasia in which the scanner template places it in the Scores from the Internet Archive category and the template in the miscellaneous notes places it in the Scores from the International Harp Archives category.
